As an Allrecipes Allstar Ambassador I've had the opportunity to participate in a campaign on behalf of Mazola®. I received a sample of Mazola® Heart Healthy Corn Oil as well as a promotional item as a thank you for participating.
As a sufferer of Ischaemic heart disease myself It's important that I follow a heart healthy diet. So I was quite interested in this undertaking and made the following two recipes as outlined by Mazola®.
The first recipe recommended by Mazola® I tried was the Pork Carnitas with Cilantro Tomatillo Sauce. I was delighted with the cooking method and will use it again in other applications. This was a great recipe. Here is my review: (4 Stars) The pork cooked to perfect tenderness. I made exactly as written and the only changes I would make next time would be to add a jalapeno to the salsa and cut back the chipotle chile powder to 1/8th teaspoon or even eliminate it to reduce the smoky flavor of the carnitas. I use a lot of chipotle chile powder and keep it on hand but I'm just not use to smoky carnitas. The carnitas are perfect with tortillas warmed on a cast iron comal.
The second recipe recommended by Mazola® I tried was Sweet and Spicy Salmon with Grapefruit Salsa.
This was a very good recipe. Here is my review: (4 Stars) The salmon cooked to perfection in 20 minutes. I did substitute mandarin oranges due for the grapefruit (conflict with medications), other than that I followed the recipe as written. Next time I may add a jalapeno to the salsa.

To achieve cholesterol reduction, one serving of Mazola® cooking oil must be part of a healthy diet and replace a similar amount of butter or other higher saturated fat oil. Very limited and preliminary scientific evidence suggests that eating about 1 tbsp (16 grams) of corn oil daily may reduce the risk of heart disease due to the unsaturated fat content in corn oil. FDA concludes there is little scientific data supporting the claim. To achieve this possible benefit, corn oil is to replace a similar amount of saturated fat and not increase the total number of calories you eat in a day.
